It's mid January, which means you should be two weeks into your New Years Resolution detox and, by now, are probably starting to waver. Have no fear, kale is here!
Whether you juice it, roast it, or like it raw, anyway is fine as long as you're eating it. Kale is a major superfood rich in antioxidants, vitamin C, vitamin K, calcium, and beta carotene.
Thanks to a kale craze a couple years' back, it's easy being green! You can find a variety of kale dishes served up at your neighborhood restaurant or grocery store deli.
